docs(reorg): rename DEX_P2P -> DEX_P2P_FiatOnOff; dissolve dApp/Betting

- Parameters/DEX_P2P -> Parameters/DEX_P2P_FiatOnOff (git mv, 5 files) — the folder is the P2P fiat on/off-ramp + order-book material, so the name now says what it is.
- dApp/Betting dissolved: its subfolders lifted one level into dApp/ (Pari_P2P via git mv; the parallel session's untracked Pari_escrow via filesystem mv; Tote had already been lifted by that session). Empty Betting folder removed.

Swept references with a FILESYSTEM grep rather than git grep, so untracked parallel files were covered too. Used the trailing-slash path form (DEX_P2P/ -> DEX_P2P_FiatOnOff/) so the substitution can't double-apply to the new name. Memory checked.

Verified: all 527 links resolve.
